Biographical Information
Lauren Haldeman is an Associate Professor in the Department of
Nutrition at the University of North Carolina Greensboro. She completed both her M.S. and Ph.D. in Nutritional Sciences at
the University of Connecticut. Her
research focused on assessing the nutrition needs and developing
nutrition education materials and interventions for low income Latino
caretakers. Prior to pursuing her
graduate degrees, Dr. Haldeman was a nutrition educator for Cornell
Cooperative Extension. These
experiences helped to shape Dr. Haldeman’s current research interests.
Dr. Haldeman’s area of research includes the development of theory based
nutrition education interventions for low-income, immigrant and minority
groups and secondary data analyses of the National Health and Nutrition
Examination Survey (NHANES).
Specifically, she is interested in addressing food insecurity, nutrition
knowledge, attitudes, and behaviors. She has received funding from the USDA Food Assistance and
Nutrition Research Program, Southern Rural Development Center and the
Food Stamp Nutrition Education to carry out her research. Additionally, Dr. Haldeman collaborated with an interdisciplinary
team of faculty researchers representing Public Health Education, Human
Development and Family Studies and the Center for New North Carolinians
to assess the availability of cultural adaptation resources for
immigrants and refugees in Guilford County. This project was funded through UNCG’s Office of the Associate
Provost for Research.
Findings from this work were published in the
Journal of Immigrant and Minority Health.
Dr. Haldeman has presented her
work with immigrants at several national meetings including the Society
for Nutrition Education, the Society for Applied Anthropology and
Experimental Biology.
